NxHolograms turns itself off at startup

The license. The console's NxHolograms block says why: no key in config.yml, or a key that was refused. Manage your key at the dashboard. One key per server.

Pictures, skins or items are missing or look broken

That player doesn't have the newest resource pack. See Resource pack. After a deploy, give players the new zip.

A placeholder shows as %…%

PlaceholderAPI isn't installed, or its expansion for that placeholder isn't. For example /papi ecloud download Player, then /papi reload.

On a double-sided hologram an item shows twice

Items are 3D, so they show from both sides. Put a solid picture behind items on double-sided holograms and it can't be seen.

Bedrock players see only the text

That's expected: Geyser shows text displays only. To show them nothing for a hologram, set its Bedrock setting to Hidden (see Designing).
